A.k.a the day I definitely can’t screw up!

Since discovering the magic of almond cheese I have been looking forward to today! I’ve made pizza hundreds of times, it’s on the short list of things I can whip up without much thought. Here’s why:
Store bought crust and sauce from my favorite Target.

I’ve tried making the crust and sauce from scratch and I’ve tried other brands of pre-made – I keep coming back to the Simply Balanced organic crust and sauce combo. I jazz it up with the weird pizza seasoning Ryan and I bought a few years ago when we were grocery shopping after a little too much wine…


I generously added some almond mozzarella and popped it in the oven! So simple! While it cooked, I enjoyed a glass of wine and shed some tears over Ellen’s 2000th episode that was replaying in CBS. She’s so nice! And there was a few too many montages of her helping people! I literally wept for most of the show, it was all too much!
Or I was hungry.
And a little wine drunk.
Seriously though, Ellen is my hero.
Finally it was done! Since Nick was at his dads for the night and Ryan was out playing D&D (oh yeah, we’re THOSE kind of nerds..) it was left to just Maggie and I to celebrate. She’s 3 1/2 so of course she loved it, and I marked today as a win!

*fun fact: I also watched the 20th anniversary episode of The View today and felt super old. I grew up on The View and Ellen – both taught me that I could be firm in my beliefs and love people as genuinely as possible. Plus Ellen and Whoopi are badass women who inspire me. Happy Anniversary ladies!
